This recipe is very simple, but as always it has familiar variations: we make it as folllows .

Heat up in a pan some crushed garlic, chilli fragments and parsley stalks with a little oil.

Boil the spaghetti for a few minutes (four or five at the most) in unsalted water, drain and and add them them to the pan.

Add cooking water, remove garlic and stems, and at the right point add the anchovy sauce, chopped parsley and olive oil. Stir carefully and serve.

1 teaspoon anchoy sauce for each person
